I agree with you. Apple Music is particularly annoying. I recommend this free little utility: https://github.com/tombonez/noTunes

Simply launch the noTunes app and iTunes/Music will no longer be able to launch. For example, when bluetooth headphones reconnect.

You can toggle the apps functionality via the menu bar icon with a simple left click.

If you haven't seen it yet, NoTunes[1] does a great job of fixing the hijacking of the play button or when bluetooth headphones are connected or disconnected.

I haven't experienced the issue with iTunes starting on bluetooth connections, but some people pointed me to this project to deal with it: https://github.com/tombonez/noTunes

But yeah, it sucks that there's no way to turn it off without moving things around.

MacOS has gotten really annoying now, the amount of tweaks needed to get the 'magic' out of the way resembles Windows in the mid-00s.
