For anyone else I recommend pdf arranger [1]
http://www.tobias-elze.de/pdfsandwich/ has been my tool for years to OCR old research papers and books. It uses Tesseract and some other tools to get the job done.

They don't have to be! Either PDF Arranger or PDF Slicer would rearrange and move pages between PDF files much more easily than PDFsam can. Take your pick:

It has a nice UI and is pretty easy to use.
