What does HackerNews think of hyperion?
The SoftDevLabs (SDL) version of the Hercules 4.x Hyperion System/370, ESA/390, and z/Architecture Emulator
Distro:
Update to Distro:

Emulator:
https://github.com/SDL-Hercules-390/hyperion
It's a MVS TK4- distribution and probably 99% of a z/OS functionality plus it's Public Domain.
Or VM/370 another Public Domain OS from IBM:
Or even better you run MVS TK4- inside VM/370...for the real taste ;)
But if you really really want z/OS (i have no clue why you would do that) you click here:

(Formerly know as Master the Mainframe)
And some yt's to have a little base-knowledge (mostly MVS and VM/370):

And a pretty good youtube channel "mostly" dedicated to MVS and other mainframe os's

And it runs on MacOS

Yes but not legal checkout MVS Tur(n)key:
And run it with the new Hercules emulator:

MVS is near identical to z/OS and the Turnkey Distro has much more compilers and tools..and games already installed.
