Maybe this repo could help: https://github.com/0xAX/linux-insides
This is very old, for a more recent version

How many of these large grand “tutorials” actually get completed?
I am still waiting to write my compiler in haskell [0] and to learn linux inside out [1]
I haven't read it but I've seen https://github.com/0xAX/linux-insides posted here a few times.
Not a course, but I read nice things about this Linux Internals ebook: https://github.com/0xAX/linux-insides

A different source for documentation on the Linux insides, for those who don't already know about it.
As for books about the Linux kernel, I'd recommend https://github.com/0xAX/linux-insides (which, oddly, didn't seem to be linked)
Or you can read Linux Insides… :-)
Wiki could work for updating this writeup efficiently, good example is the way linux booting was described using github.
