I wonder when 6.anything is going to land in Ubuntu Lunar. Perhaps they were waiting to skip 6.0 and go directly to 6.1?
If you want a newer kernel on Ubuntu, consider installing a third party one. XanMod Kernel works great for me.
There's also a nice bash script you can use that will patch your kernel to a newer version on Ubuntu I've used
